Single Origin
Misadhi Coffee Society is a group of coffee farmers in the Etago region who experiment with a variety of drying and fermentation methods through their organization. For this lot, they have fermented freshly picked coffee cherries, primarily of the Blue Mountain variety, in an oxygen-deprived environment known as anaerobic fermentation.
Fermentation
The coffee underwent closed fermentation for 96 hours – in the farmers’ self-developed fermentation tanks – under careful monitoring to ensure the pH level does not drop below 3.5. They themselves call this process Etago Extra Special. The result is a coffee with a wine-like fruitiness reminiscent of truly sweet raisins, grapes, and prunes.
