In many ways, the Pereira sisters symbolize the new generation of coffee producers in Brazil, using innovative processing methods to produce exceptional coffee (techniques derived from the wine world). They took over the farm from their father and then renamed it to Irms Pereira, meaning the Sisters of Pereira.
The freshly picked coffee is allowed to dry in its skin, which allows for a controlled and soft type of fermentation that gives a soft and round coffee with a character of chocolate, hazelnut and caramel. The body is powerful yet soft.
